For this dish, I stuffed medium-sized artichokes with a mixture of garlic, mint, pecorino romano cheese, toasted pine nuts, and panko breatcrumbs. Then I poured in some water and white wine into the baking dish so it came up about an inch. I baked them covered at 425F for about 40 minutes and then an additional 15 uncovered to get them brown on top.⁠⁠

My client recently asked me to make her Kabab Karaz (Meatballs in Sour Cherry Sauce) from Aleppo, Syria. My riff on this vibrant recipe was inspired by @anissahelou’s in "Feast: Food of the Islamic World".⁠⁠

This dish starts with a savory meatball that you simmer in a sour cherry sauce. Since cherries aren't in season right now, I soaked dried tart cherries over night and then wove them together with a bit of honey and pomegranate molasses. ⁠⁠
⁠⁠
I finished the dish with a bit of cilantro and pistachios as a garnish (pine nuts are used traditionally). ⁠⁠

Cooking Yiayia's Manti Recipe // My yiayia (grandm Cooking Yiayia's Manti Recipe // My yiayia (grandmother) Chrysanthe was born at the turn of the century in Gavalohori, a village outside of Chania in Crete. An interesting moment in history for Crete; it was transitioning from 250 years of Ottoman occupation to become an autonomous state before it united with Greece.⁠

We can only imagine the reason she cooked Manti was a result of this, as the way she makes them is most common in Turkey and the Caucasus. While she wasn't cooking much by the time I was born, my aunt who sent me this recipe said she used to go over to her house and make Manti with her and her mother using homemade phyllo.⁠
⁠
I love the idea of community cooking — especially women gathering together — and how these dumplings, (as laborious as they can be to roll up individually) can be time well spent with others. I feel like that's something that's been lost — especially now with Covid — but a tradition that I would excitedly welcome back.⁠
⁠
Being a bit short on time, I followed my aunt's lead and used wonton wrappers. We add bulgur to the ground beef filling (I'm sure they used it to stretch out the meat), along with a minced onion. I added dried mint and garlic as well.⁠
⁠
Then you roll up your Manti in whatever shape suites you. I used one wonton wrapper per dumpling and put a heaping teaspoon of filling in each before filing in the ends. In Armenia and Turkey, they can make them a quarter of this size, which are really gorgeous.⁠
⁠
Then you bake them at 400º for about 20 minutes, then add hot water or broth and bake another 10 minutes until most of that has been absorbed.⁠
⁠
This is a work in progress for me with amounts and so on, but a recipe I'm excited to be working on. My yiayia has been gone for over 20 years now, but making her recipes makes me feel like she's with me all over again.⁠

We spent that Sunday strolling the streets and eating hazelnut, chocolate, and pistachio gelato in brioche like sweet gooey sandwiches in the piazza in front of the cathedral built in the 13th century. ⁠⁠

This was a breezy afternoon before a week filled with uncertainty, stress, and some chaos when my fellow @annatascalanza students and I had to leave abruptly due to local shutdowns and the US travel ban.⁠⁠

But this day was sweet, and I'm just waiting for the next time I get to sink my teeth into a gelato-brioche sandwich again—hopefully soon! #feelingoptimistic⁠⁠

To say meatballs are one of my favorite comfort foods would be an understatement. I love them with any type of ground meat, served alone, or Keftedes served with tzatziki on a mezze spread. I make them all the time for my Los Angeles personal chef clients because they are so versatile, delicious, and freeze well.

At their most simple (and my favorite way) involved removing the tough outer leaves and stuffing them with garlic, olive oil, and fresh herbs, and roasting them right in hot coals. They were the best at our barbecues or from the market stand in Catania. ⁠⁠

@lmsthompson's Strawberry-Cashew Butter Cups taught by @clarelangan are the perfect bite that I seriously can't stop eating. @jakiesjams strawberry preserves were an incredible pairing with the chocolate. We combined all the ingredients in @ifyoucare_usa's mini baking cups.⁠⁠

This week I made Chicken Karahi, a spicy tomato-based dish from India/Pakistan. After cooking for hours at my clients' houses every day, the last thing I want to do is jump into a complicated recipe when I get home — or wait an hour for delivery. This was the perfect solution.⁠⁠

What made it super easy was using @shanfoodsglobal Karahi/Balti sauce #ad All I had to do to make it was brown chicken, add in some attentional tomatoes, and pour in the sauce. The result was a dish that tasted better than take out and was done in less than 20 minutes. I paired it with a side of saffron rice, or — in this photo — saffron infused freekeh. ⁠⁠

Maqluba • Maqlooba • Maklouba (translates to u Maqluba • Maqlooba • Maklouba (translates to upside down) • is a dish from the Levant that layers veggies, meat, and rice in one pot, which you flip over at the end of cooking and serve.⁠⁠

I've only eaten chicken maqluba before, but when my personal chef client asked me to make her a version with lamb, I was super excited to do it. For this recipe, I layered tomatoes, eggplant, cauliflower, lamb shoulder, and basmati rice. I pressure cooked the lamb shoulder and then layered everything into my pot, added stock from the lamb and cooked it until the rice was tender. ⁠⁠

The flip was successful and my client and her parents had a delicious lunch. ⁠⁠

I felt really accomplished, but then I searched Maqluba photos on Instagram and it was apparent that I really have to up my game. Still, here's to a very delicious dish that spans countries and cultures.⁠⁠

I've been experimenting with different combos for quinoa pilaf. For this one I added in dried cranberries, pistachios, shallots, and cilantro.⁠⁠

My base recipe combines 1 cup of quinoa with sautéed shallots, some type of dried fruit and nuts. ⁠⁠
⁠⁠
Once I cook the quinoa for 15 minutes, I spread out the dried cranberries on top to let them rehydrate a bit in the residual steam⁠⁠
⁠⁠
Add in herbs and other garnishes to your taste. You can even stir in a little vinegar to balance everything out.⁠⁠
⁠⁠
This pairs so well with anything from fish or chicken to roasted root vegetables if you're going for a #meatlessmonday option.⁠⁠

But here, I'm riffing on my recipe by adding chicken in place of the shrimp, since some of my personal chef clients aren't able to eat shellfish. ⁠⁠

All you have to do is brown chicken breasts or chicken thighs in a pan and then remove them, and then proceed by sautéing your onions, garlic, and tomatoes. Add the chicken back into the pan, top with feta (and olive too), and roast it in a 375º oven until the chicken is cooked through.⁠⁠

I love using organic cherry tomatoes for this, as the flavor is more concentrated. And serving it over some orzo pasta is such a treat!⁠⁠

This recipe weaves together butternut squash, spinach, tomatoes, and cannellini beans. It calls for canned beans, which makes it super easy. I used dried because I wanted to prep a big batch in my pressure cooker to use throughout the week.⁠⁠

I also cooked the pasta separately to add in, so it wouldn't get waterlogged cooking the soup. Make it vegetarian/vegan by using vegetable broth instead of the chicken broth the recipe calls for.⁠⁠

I loved making this Eggplant, Chickpea, and Tomato Bake (Musaqa'a) recipe from #Falastin. It reminds me both of Greek Moussaka and Briam, just with slight differences. ⁠⠀

It's layers of roasted eggplant and tomatoes that blanket a filling of bell peppers and chickpeas. I riffed on it by adding zucchini because I thought it would compliment the rest of the ingredients. It's also much lighter than traditional Moussaka because it doesn't have a béchamel.⁠⠀
